sprouted croquettes

75g/3oz Cashew, Almonds or Brazil nuts

100g/4oz Sunflower or Pumpkin seeds

2 organic spring onions – chopped

2 tablespoons of Nama Shoyu (raw soy sauce – available from The Fresh Network, check out their website)

Handful of mixed beansprouts

Here's how

  1. Grind the nuts and seeds.
  2. Add the chopped spring onions and Nama Shoyu. Draw the mixture together and form into balls.
  3. I found the mixture to be a little wet, so I dehydrated them overnight. If you don't wish to do this, or don't have a dehydrator, then I suggest that you reduce the amount of Nama Shoyu. These can also be used to stuff nori sheets.
