celery soup
1 large organic onion
1 large organic carrot
1 med size organic potato
1 large bunch organic celery
1-2 pints veg stock
2 tspns olive oil
Here’s how
- Slice the onion into small pieces and ‘sweat’ in the olive oil on a low heat.
- Grate the carrot and add that. Cover the pan and continue to sweat until onion and carrot soft.
- Then add the vegetable stock and diced potato.
- Slice the celery into small pieces and add to pan (if you can get celery with leaves still on, add those too).
- Bring everything to boil then simmer for about ½ to ¾ of an hour.
- Allow to cool slightly then pour into blender until smooth.
- Then scoff it!
