celery soup

1 large organic onion

1 large organic carrot

1 med size organic potato

1 large bunch organic celery

1-2 pints veg stock

2 tspns olive oil

Here’s how

  1. Slice the onion into small pieces and ‘sweat’ in the olive oil on a low heat.
  2. Grate the carrot and add that. Cover the pan and continue to sweat until onion and carrot soft.
  3. Then add the vegetable stock and diced potato. 
  4. Slice the celery into small pieces and add to pan (if you can get celery with leaves still on, add those too).
  5. Bring everything to boil then simmer for about ½ to ¾ of an hour.
  6. Allow to cool slightly then pour into blender until smooth.
  7. Then scoff it!
